We've been making this recipe all wrong

Reader, I’m going to get right to it: we have been doing potato salad wrong.

And when I say “wrong,” I don’t mean the mostly-harmless category of mistake that includes not being able to remember whether your boss’s partner’s name is Mike or Mitch at the company summer family potluck.

I am talking about the apocalyptic category of mistake, like when someone plunked a ladle of mayonnaise into a bucket of overcooked potatoes for the first time and declared, "This is fine."

Friends, this is not fine.

Call me hyperbolic, but I believe that taking a medley of ingredients and sliming them up until they’re nothing more than a pale pile of gloopy, one-note mouthfuls is egregious.

Say it with me: we can do better.

Introducing, The Best Vegan Potato Salad.

This is potato salad at its absolute best: it showcases perfectly-cooked potatoes, it’s packed with bright flavor, and it’s creamy while still being wholesome. Herby, fresh, punchy, tangy, and not a drop of mayo in sight.

Let 2025 be the year of the Potato Salad Glow-Up. Bring it to your summer picnics with confidence. And while we’re fixing mistakes–just reintroduce yourself to Mike/Mitch, because he definitely doesn’t remember your name either. Then tell him you're the one who brought the potato salad 😊

This is the best potato salad (vegan or otherwise). I made it last night for a group of omnivores and everyone loved it.

Today, I'm sharing what I actually eat in a week (at least, when I'm not recipe testing). But first, we need to discuss my partner Max's only red flag. 🚩 His only red flag Sixteen years ago, when I met my partner Max in law school, I discovered he had one red flag: he hated peanut butter. 🚩🚩🚩 Not only did he hate eating it, he insisted the smell alone made him gag. Since I was practically living off peanut butter as a student, I would eat my PB&Js in the dead of night, like a raccoon huddling...

But we have some time-sensitive business to attend to first, on account of Thanksgiving (somehow?!) being 2 weeks away. 😱 Today, we’re talking about the iconic duo that kinda makes Thanksgiving Thanksgiving. And by that I mean mashed potatoes and gravy. But make them extra delicious. If you’ve ever thought these dishes were impossible to veganize, think again! My Seriously...

by Nisha Vora Tomorrow’s my birthday(!), and every year around this time, I like to reflect on the past year: the highlights, what I’d like to work on, and the challenges. And this year I've been thinking a lot about how I can continue my career—one that I love SO SO much, thanks to all of you—in a world where AI is becoming increasingly prevalent. Across Google, social media, and Pinterest, there are hundreds of thousands of recipes stolen, reworded, and regurgitated by AI chatbots. Chatbots...
