Possibly my favorite taco ever 🌮


Reader you’ll never guess what I wanna taco ‘bout today.

(Note: I have given myself a quota of 3 groan-inducing taco puns in this email. The good news? You’ve already survived the first. )

I’m passionate about tacos, so when I set out to develop a taco recipe, the stakes are high. I’m like Vermeer with a tortilla canvas, layering flavors and textures with the aim of creating a 4-bite masterpiece.

And since I’m not sure how Vermeer announced the completion of his great works, I’m doing it in an email newsletter: behold, my Ultimate Vegan Tacos.

There is so much that’s special about this recipe, but the headliner is that it features soy curls, adorable plant-based protein strips that actually take on the texture and flavor of chicken! Trust me–my non-vegan partner Max gives these his “genuinely tastes like meat” stamp of approval.
