She Requested This For Her Last Meal 🍽️


Hi Reader--

When my friend Sarah took her first bite of these Crispy Black Bean Tacos, she paused mid-chew and said, “Yeah… this is pretty much what I want in a last meal.”

Morbid? Maybe.

Accurate? Absolutely.

To be fair to Sarah, the term “taco” doesn’t do justice to these savory pockets of toasted magnificence.

These bad boys are:

  • Packed with a savory and rich black bean filling (plus cheese!),
  • Sealed up to get baked in the oven until golden-y crisp and puffy,
  • Then pried open so they can be stuffed with lime pickled onions and tangy crema.

They’re plant-based indulgence with fast food vibes, and like Sarah, I am fully obsessed with them.

My picks for savoring summer

I wanted to share a few things I’ve been loving this season (before we transition into a new one)! Check out my picks for something to put on your body, something to put in your body, and something to do with your body!!

🩴 Cute and comfy sandals, finally.
I spent nearly my entire adult life trying to find shoes that were cute but also extremely comfortable. A few years ago, a friend recommended Vivaia shoes, and now they are pretty much the only shoe brand I own. Peak comfort, so many cute styles, and eco-friendly. Loving these sandals during summer!

🍨 Ice cream!
While my preference in summer is to go to an ice cream shoppe and slurp up a scoop of cream in a cone, sometimes that's not possible—the next best thing is keeping my freezer stocked with Jeni’s dairy-free ice cream!

☀️ Doing regular life activities outside
Why read inside when I can read outside? Why take a phone call inside when I can take it outside? Why eat dinner inside when I can eat it outside? You get the point. Doing as many things outside as possible is my ultimate easy life hack for getting the most out of summer.
