Hi Reader--
It’s the unofficial start of summer (aka Memorial Day weekend), and I am SO ready to dive into all the fresh, flavor-packed cooking this season has to offer.
If you’re looking for some plant-based inspiration for your long weekend eats, here are three recipes I’m making this weekend, plus a great sale you can use to stock up on quality cookware.
🥪 Tofu Sandwich with Vegan Pesto
Okay, this one’s a sneak peek—recipe coming later this summer—but I had to include it because it really feels like the sandwich of summer.
Thick slabs of crispy tofu, slathered in garlicky vegan pesto, tucked into crusty bread with juicy tomatoes, pickled onions, and crunchy greens.
It’s messy. It’s satisfying. It’s all I want to eat this summer.

🥔 Vegan Potato Salad
A million miles from your average gloopy, mayo-drenched side dish from 1990s potlucks.
This is the best potato salad I’ve ever eaten—creamy, tangy, herby, and loaded with flavor from fresh dill, mustard, capers, lemon, and even a hint of jalapeño. And yes, it’s still rich and creamy without a drop of mayo. Make this and watch it disappear at your BBQ.
