NEW 💫 Ultimate Crispy Roasted Potatoes

Hi Reader--
It’s T-minus 4 days until Thanksgiving, so there’s a good chance you have mashed potatoes on the brain. But, if you’re like me, what you’re really living for this season is crispy potatoes.
I’m talking about a thick, crunchy-crispy exterior with a buttery, tender interiorthat almost melts in your mouth (i.e., the best of the potato worlds). Optionally, you can brush the roasted potatoes with a simple rosemary oil to take them to the next level.
This dream recipe—which requires just potatoes, extra virgin olive oil, salt, pepper, and rosemary—came about after I tested four popular roasted potato recipes from major food publications, dug deep into the potato science, and tweaked my recipe until it was just right.
All in all, I tested 50 pounds of potatoes in a couple weeks, and honestly, I’m still not tired of eating these seriously delicious potatoes.
