My favorite way to cook potatoes πŸ₯”

Hey Reader--

There are a hundred ways to cook a potato, but my absolute favorite way to enjoy them is to make crispy smashed potatoes. I like this method more than classic roasted potatoes, mashed potatoes, scalloped potatoes, baked potatoes, and, yes, even French fries.

The textural contrast is nothing short of addictive, and they're shockingly easy to make.

In my recipe, potatoes get par-boiled, smashed, then roasted until they become perfectly crispy on the outside but creamy and buttery on the inside.

They're delicious as is, but even better when served with a tangy ginger-tahini dressing, fresh herbs, thinly sliced chili peppers, and roasted peanuts. It's the perfect textural package of crisp, creamy, crunchy, and melt-in-your-mouth tender.

Give 'em a try and let me know what you think!

Even though I think crispy smashed potatoes are peak potato goodness, I have several more go-to potato recipes that are perfect for blustery weather (both regular and sweet potato!).

The only challenge for you will be deciding which one to make first!

Nothing makes me happier than seeing that you guys loved a recipe!

"These are great! I love how the science of the ingredients, the temperature and all the instructions makes excellent muffins! Will for sure make those again. I can’t wait for my daughter to wake up so she can have some in the morning! I feel like they are not going to last long!"

by Nisha Vora Hi Reader-- Last week, I sent my round-up of 40 vegan Thanksgiving recipes to subscribers. If you missed it, you can find it here. Today, I wanted to share a revised list of what I'm making this week for Thanksgiving. With 17 family members joining this year, my parents' kitchen is going to be crowded. So for most of these dishes, I'm doing the work well ahead of time. If you haven't planned your menu, there's still time to grocery shop today and prep a few of these items...
