What I'm Making This Week


Hi Reader--

Last week, I sent my round-up of 40 vegan Thanksgiving recipes to subscribers. If you missed it, you can find it here.

Today, I wanted to share a revised list of what I'm making this week for Thanksgiving.

With 17 family members joining this year, my parents' kitchen is going to be crowded. So for most of these dishes, I'm doing the work well ahead of time.

If you haven't planned your menu, there's still time to grocery shop today and prep a few of these items tomorrow.

Snacks

Crudité and Ranch Dressing. Every year, it takes a little longer than we expect to get everything ready to serve. To prevent any hangry meltdowns, I'm coming prepared this year with store-bought crudités and my beloved vegan ranch dressing.

Starter

Roasted Pumpkin Salad. I always like to have something with bright and fresh on the table to balance the heavy dishes. I'm whipping up the balsamic vinaigrette, sweet pumpkin crunch, and roasting the pumpkin ahead of time.

Creamy Mushroom Soup. My dad insists we have at least one soup at any holiday dinner, so this year I'm making my ridiculously creamy, super savory mushroom soup. I'll make the whole thing a day in advance.

Sides

Vegan Cornbread. Crispy-crusted, buttery, and moist vegan cornbread is a crowdpleaser any time of year but especially on Thanksgiving. I'll make this Thursday morning.

Mashed Potatoes + Vegan Gravy. I'm cheating here a little bit because I'm not the one making them...my dad is making this instead of me! My family members are traditionalists when it comes to mashed potatoes on Thanksgiving; I'd prefer crispy roast potatoes everyday of the week!

Main

Skillet Lasagna (page 519 of Big Vegan Flavor). A wow-worthy centerpiece for your Thanksgiving table. Way more popular than turkey at an omnivore Thanksgiving. I'm making the red sauce and tofu ricotta tomorrow.

If I were not making this lasagna, I'd probably go for my vegan moussaka or maybe my Lentil Shepherd's Pie. Both have components that can be made ahead of time (or they can be entirely assembled before baking).

Dessert

Apple Crisp. Easier than pie but just as delicious (even more so in my opinion). Maple-spiced apples + buttery streusel topping = dessert perfection. Serve with good vanilla ice cream. One of my cousins has kindly volunteered to make this :)
