I Look Forward To This Spring Pasta All Year

Hi Reader--

It should be no surprise to you that I am kid-on-Christmas-Day levels of giddy as spring produce starts to show up at the farmers’ market.

And news flash: asparagus is BACK.

That’s right, the King of Spring has returned and this is my favorite recipe for welcoming him back into season: my weeknight-friendly but date-night-worthy Lemon Asparagus Pasta!

You’ll sauté the asparagus in a little olive oil alongside shallots, garlic, and lemon zest, and voila, it’s dazzling! It joins pasta coated in a velvety sauce that’s both elegantly rich thanks to crushed walnuts but oh-so-lively (think: fresh, zingy brightness thanks to olives & capers, fresh herbs, and loads of lemon).

The result? The perfect dish for celebrating the arrival of spring in style.

If you have my cookbook Big Vegan Flavor, the Garlicky Asparagus & Beans with Lemon-Infused Olive Oil (page 379) is such a fun way to welcome warmer weather.

And the Savory Asparagus Galette with Vegan Ricotta on my website is a fab weekend brunch idea 😍

“This is out of this world delicious — and the ricotta is dynamite. I made this for a potluck and what a hit! This is going to be a go-to company dish.” - Diane

“This turned out AMAZING!!! [...] The flavors scream spring and I will definitely be making this again.” - Alyssa

“I served this for the first time last night and it was a huge hit…It turned out wonderfully and my guests were in awe really—such a beautiful presentation, delicious flaky crust, fantastic lemony asparagus-y flavor [...]Thanks for another home run, Nisha!”
- Victoria

Happy spring,

Hi Reader-- Lifelong quinoa-hater here! 🙋🏽♀️ Okay, that’s a tad dramatic. But I have always found quinoa to be, at best, extremely meh. And life is too short to eat meh food. But you know I love a challenge. So, I went on a quest to develop a dish that could surprise and delight even the toughest quinoa critic (...me). Behold, the first quinoa dish to ever win me over (and have me clamoring for seconds): an Actually Good Quinoa Salad. This salad is the opposite of meh. It’s so texturally...

Hi Reader, As you probably know by now, I'm a big fan of doing a little bit of meal prep on the weekends to make my weekday and weeknight meals a bit easier. Specifically, I like to prep individual components that can be used in lots of different ways throughout the week. Not only do they save time on cooking and enable me to eat a diverse diet, but they also make meals on busy days much more interesting than they otherwise would be. And today I’ve got five brand new meal prep components that...

Today, I'm sharing what I actually eat in a week (at least, when I'm not recipe testing). But first, we need to discuss my partner Max's only red flag. 🚩 His only red flag Sixteen years ago, when I met my partner Max in law school, I discovered he had one red flag: he hated peanut butter. 🚩🚩🚩 Not only did he hate eating it, he insisted the smell alone made him gag. Since I was practically living off peanut butter as a student, I would eat my PB&Js in the dead of night, like a raccoon huddling...
