His Only Red Flag 🚩


Today, I'm sharing what I actually eat in a week (at least, when I'm not recipe testing).

But first, we need to discuss my partner Max's only red flag.

🚩 His only red flag

Sixteen years ago, when I met my partner Max in law school, I discovered he had one red flag: he hated peanut butter. 🚩🚩🚩

Not only did he hate eating it, he insisted the smell alone made him gag. Since I was practically living off peanut butter as a student, I would eat my PB&Js in the dead of night, like a raccoon huddling over a trash can 🦝

Fast forward to today.

Max still claims he doesn’t like peanut butter. But there's one peanut butter-forward recipe he'll happily devour: these garlic peanut noodles.

The secret? When you pair peanut butter with the right savory, tangy flavors (think soy sauce, rice vinegar, and sizzled garlic) and slurpable noodles, even the most stubborn PB haters can't resist.

🔑 What I'm eating this week!

When I'm not up to my ears in recipe tests, I've been using the meal planner I created — Meal Plans by Rainbow Plant Life — to plan out my weekly meals, and I thought it might be fun to share what an actual week in my life looks like.


1️⃣ I started off by selecting one of the pre-set meal plans because I adore the three featured dinner recipes: Halal-Cart Style Bowls, Green Curry Ramen, and Buffalo Chickpea Cauliflower Tacos (not pictured, still delicious).


2️⃣ For breakfast this week, I picked two recipes from the app to make: the high-protein version of my tofu scramble (28g protein!) and an easy green smoothie. I doubled the serving size on the scramble so Max can also have an easy breakfast to warm up during the week.

3️⃣ Even though I work from home, it's pretty rare I make lunch from scratch. Typically, I'm just having leftovers from the night before, unless it's a recipe testing day.

4️⃣ Speaking of leftovers, I'm in love with the new "placeholder" feature in the meal plans app. It's so nice to visualize when I'm eating leftovers or going to dinner with friends and family.

5️⃣ Eagle-eyed readers will notice the Snickers Stuffed Dates on Friday afternoon. I'm making a half-batch to bring over to my parents for a healthier sweet treat. If you have a copy of Big Vegan Flavor, the Chocolate-Covered Dates with Pistachio on page 574 are one of my favorite-ever treats.
