He won’t stop requesting this sandwich 🥪

She’s here! Allow me to introduce you to…

The Sandwich Of Summer 2025.

This baby's got it all:

  • Rich pistachio-pesto;
  • Perfectly toasted ciabatta;
  • A pile of zingy and crunchy slaw;
  • Juicy heirloom tomatoes + buttery avocado;
  • And a crispy-edged slab of warm tofu.

It’s no wonder my partner Max has been requesting we have this at least once a week.

Make this sandwich, and take a bite out of summer. And another. And another.

😇 This sandwich + this pan = a match Made In heaven

It would be unforgivable for me to give you this sandwich recipe without revealing the tool I use to get the tofu slabs perfectly golden-crisp every time: my Made In 12” carbon steel frying pan.

Made In’s carbon steel pans are something special: they retain heat as well as cast iron but they're lighter and respond to heat changes better.

Best of all, they become naturally nonstick as you cook with them (seriously, I even make pancakes in them), giving you all the benefits of nonstick pans with none of the sketchy coatings. Perfect if you're trying to cut down on your sketchy coating intake, like me.

Thank you to Made In for sponsoring my most recent YouTube video!

🎥 Watch me make the Sandwich of Summer!

[Stefon from SNL voice] This video has everything: close-ups of mouthwatering pesto, me getting lemon juice in my eye, and even a rare on-camera appearance from Max himself.

Trying to make this summer the one where my “perfect sandwich” bites outnumber my mosquito bites. Wish me luck.

Today, I'm sharing what I actually eat in a week (at least, when I'm not recipe testing). But first, we need to discuss my partner Max's only red flag. 🚩 His only red flag Sixteen years ago, when I met my partner Max in law school, I discovered he had one red flag: he hated peanut butter. 🚩🚩🚩 Not only did he hate eating it, he insisted the smell alone made him gag. Since I was practically living off peanut butter as a student, I would eat my PB&Js in the dead of night, like a raccoon huddling...

But we have some time-sensitive business to attend to first, on account of Thanksgiving (somehow?!) being 2 weeks away. 😱 Today, we’re talking about the iconic duo that kinda makes Thanksgiving Thanksgiving. And by that I mean mashed potatoes and gravy. But make them extra delicious. If you’ve ever thought these dishes were impossible to veganize, think again! My Seriously...
